Step 1
Get rid of any sand inside the clams by soaking them in cold water for around 20 minutes.
Step 2
Cut out the zucchini skin and chop spring onion, ginger and garlic.
Step 3
Heat pan with oil, add the spring onion, ginger and garlic mix.
Step 4
Add clams and stir fry them until they start to open up.
Step 5
Slowly add Fukien Old Wine along the edge of the pan. Continue to stir fry on high heat

Add zucchini and cook until soft. Depending on your taste preference, add soy sauce, salt and sugar.
Step 7
Add around 5 cups of cold water. Wait until the soup boils and adjust taste according to your own preference.
Step 8
Add the noodles and turn the heat to medium. (Don't be afraid to add more water as the noodle tends to soak up a lot of liquid!)
Step 9
Once the noodle is ready, add more fresh spring onion and white pepper for extra flavour.
